Red sea bream (Tai) steamed in white wine served with minestrone
【Ingredients】(1 serving)
80 g (2.8 oz) red sea bream
10 g (0.4 oz) vermicelli
50 ml (1.7 fl oz) white wine
1/4 onion, cut into 1 cm (0.4 inch) cubes
1/3 carrot, cut into 1 cm (0.4 inch) cubes
1 potato, cut into 1 cm (0.4 inch) cubes
1/3 zucchini, cut into 1 cm (0.4 inch) cubes
1/3 eggplant, cut into 1 cm (0.4 inch) cubes
20 g (0.7 oz) bacon, cut into 1 cm (0.4 inch) cubes
2 teaspoons garlic (2 cloves), finely minced
2 tablespoons olive oil
500 ml (17 fl oz) chicken stock
2 tablespoons beans (steamed or canned)
2 large tomatoes
Italian parsley, coarsely chopped, as needed
A dash of salt and pepper
Cayenne pepper and lemon juice, as you like
【How to cook】
1. Peel off tomatoes in a hot water and cut into 1 cm (0. 4 inch) cubes.
2. Sprinkle salt and pepper on the red sea bream. Place them in a frying pan, heat, add white wine, cover and steam for 5 to 6 minutes.
3. Put olive oil and garlic in a pot. Slowly heat until fragrant and sauté onions, carrots, potatoes, zucchini, eggplants, and bacon. Add chicken stock, beans and tomatoes. Cook until the beans are soft. Add the vermicelli after breaking it into about 3 cm (1.2 inches) pieces and cook for 2 minutes. Season with salt, pepper, cayenne pepper and lemon juice.
4. Place (3) on a plate and sprinkle with parsley. Top with wine-steamed fish from (2).
