Yellowtail Fried Rice
Ingredients (2 servings)
- Yellowtail* 150 g (5.3 oz)
- Rice 300g (10.6 oz)
- 2 eggs
- 2 tablespoons red and yellow bell peppers, 5 mm (0.2 inches) cubes
- 2 tablespoons chopped chives
- 2 tablespoons onions, 5 mm (0.2 inches) cubes
- 2 tablespoons carrots, 5 mm (0.2 inches) cubes
- 2 tablespoons snap peas, cut into chunks
- 1 teaspoon garlic, minced
- 2 teaspoons soy sauce
- Parsley, finely chopped
- Oil for stir-frying
* Season with 1.5% salt (0.08 oz for 5.3 oz yellowtail), cover with cling wrap, and place it in a refrigerator. Pat dry with paper towel.
How to cook
1. Grill yellowtail on a grill and flake.
2. Put frying oil in a frying pan and heat, add beaten egg and heat until it is softly set and slightly runny in places. Place egg aside.
3. Add oil and garlic in the frying pan. Heat until fragrant, add onions, carrots, green peppers, chives and snap peas.
4. Add the rice and stir-fry, then add the grilled yellowtail (1) and eggs (2). Add salt and pepper and stir-fry further. Add a dash of soy sauce just before stop cooking. Place on a serving plate and sprinkle with parsley.
